The Pumpkin Power Bite Recipe

When your day is packed with meetings, it's tough to break away and eat right.Whip up these easy (no-bake!) power-packed Pumpkin Bites and you'll be in good shape when hunger strikes.No sketchy ingredients you can't pronounce. No fillers. Just real food. (And they taste like rich spoonfuls of cookie dough!)Each ingredient has its own private list of health benefits (seriously), but we're going to focus on the pumpkin seeds today.Just a few reasons why pumpkin seeds are awesome...- Alkaline-forming (helps counteract negative effects of acidic foods)- Protects against osteoporosis- Reduces inflammation for arthritis- Packed with minerals including; phosphorus, magnesium, manganese, iron, and copper- Improves PMS symptoms- Contains zinc and Vitamin E (good for eyes/hair/skin)pumpkin-power-bite* 1/2 cup pumpkin* 1/4 cup almond butter* 1/4 cup pumpkin seeds* 1/4 cup sunflower seeds* 1 heaping TBSP honey* 1 TBSP ground chia seeds* 1 TBSP chia seeds* 1 TSP vanilla* 2 TBSP mini chocolate chipsMix all ingredients in a bowl until evenly combined. Scoop tablespoons into chocolate molds (or just roll into balls). Put the pumpkin bites into the freezer for 2 hours. Makes 15 bites.
