These little boats are so tasty, and instead of regret, leave you feeling light and satisfied.Crab Avocado Salad Endive Boats* 1 ripe avocado chopped (1/4 inch cubes)* 1 peeled and chopped cucumber (bite-size pieces)* 1 tomato chopped into 1/4 inch pieces* 3 ounces of crab meat* 1 large head of endive* 1/4 of fresh lemon to squeeze on top* Dash of garlic powder* Scallions optional* Dollop of mayo/vegenaise optionalCarefully toss all the ingredients together (add the avocado last).
